Chicken Salad Spread

"The chicken salad is quick and easy. If you want a little 'zip', add a few drops of hot sauce to the mixture! Serve on lettuce as a salad or on bread as a sandwich."
Original recipe yield: 4 servings.

Servings:
4 (change)

INGREDIENTS:

* 1 (10 ounce) can chicken chunks, drained
* 1/4 cup chopped celery
* 1/3 cup low-fat mayonnaise
* 1/2 teaspoon onion powder
* 1/2 cup sweet pickles, chopped

DIRECTIONS:

1. Combine the chicken meat, celery, mayonnaise, onion powder and sweet pickles.

1. Two Cans of Canned Chicken or a cup of Left Over chicken
2. Three Tablespoons of Mayo or Salad Dressing (I LOVE THE TANGY ZIP OF MIRACLE WHIP)
3. Two chopped stalks of celery
4. 1/2 Cup of chopped onions
5. Pepper to taste

Quick and easy

Slop some mayo on shredded chicken. Add some onion and garlic powder, salt and pepper to taste. Toast 2 pieces of bread and just slop the chicken salad between them

I like mine with grapes
Ingredients:
1 cup canned chicken chopped
1 1/2 cup sliced grapes
1 cup chopped celery
1/4 cup chopped onion
1/4 cup chopped olives
1 hard boiled egg
1/2 cup Miracle Whip
Poultry Seasoning to taste
Romain lettuce


Directions:

Chop finely the chicken, onion, grapes, boiled egg and celery very fine. Shred or chop the lettuce. Use green or black olives, which ever you have on hand or like best. Mix everything together thoroughly. spread on the sandwich with chopped lettuce.

Get a couple of cans of chicken, mix with minced celery, black pepper, cayanne pepper, minced brown or red onion (use only half), 3 Tablespoons of mayo, toasted your bread, add a couple pieces of lettuce, a couple slices of tomato, add sliced cheddar cheese, crisp cooked bacon, add chicken mix, andother slice of cheese and top with the other slice of bread, have chips on the side and a pickle or add sweet relish to the mix. Enjoy.

If you use your basic chicken and mayo combo except mix some sesame oil into the mayonnaise before adding it to the chicken. Throw in some scallions and chives, maybe cilantro if you like that sort of thing.

I love chicken salad with mayonaise, salt and pepper, curry seasoning, dried apricots, and grapes. Best served on thick sliced toasted whole wheat bread with melted brie cheese and garden fresh sliced tomatoes. I'm hungry now!
