I would only add sugar to home made tomota sauces because store bought already have netrilized the acid from the tomatoes. But if it is home made than add one tablespoon per 2 cups of tomatoe sauce. Also (from the point of a culinary student) add a shot of vodka, it will break down come of the emzimes in the tomatoes add make a great flavor.

Are you using the store bought kind? If so it has some sugar in already. I still may put a pinch or two to tone down the tart taste. If you use tomatoe sauce and tomatoe paste then I definetly use sugar. I find it to be toooo tart. I never measure the amount I just add to taste. I think it's about what you have a taste for. Just add to suite your taste. Some poeple like that tart taste I can't stand it! Good luck on your cooking!

We have diabetics in the family, so we don't add any. If you are trying to cover up the acidic taste of the tomatoes, here is a trick I learned from my aunt. Put a carrot in the sauce ase it cooks. Throw the carrot out! It makes a huge difference.

If you mean homemade, i have heard of 1/2 to 1 tsp BROWN sugar in a large pot of sauce to sweeten it if it is too sour. Use good roma tomatoes for your sauce, they are best. For jarred sauce i don't add any.

If you are making tomato sauce from scratch after adding all your ingredients (canned or fresh pealed Roma tomatoes, garlic, basil, oregano, olive oil, onions) cook down for a while then TASTE if it is too bitter (acidy) for your liking Then add a teaspoon of sugar to cut the acid taste.
If u are using canned or jar sauces... The is too much sugar in those already, do not add sugar. ENJOY!

I know this is at the end and you might not see this but here please look at this recipe and you have to trust it my girl friend is from Italy
Ingredients:
• 1 small onion
• 1 small green pepper
• 2 large garlic cloves
• 4 tbsp. olive oil
• 1 28 oz. can crushed tomatoes
• 1 tbsp. oregano
• 1 1/2 tsp. sweet basil
• 1/2 tsp. rosemary
• 1/4 tsp. marjoram
• Black pepper
• 1/2 cup dry red wine
• 2 dashes of bottled hot pepper sauce
Finely chop the onion and green pepper and crush the garlic. Saute in oil in saucepan until onion and pepper are soft. Add tomatoes and all other ingredients. Bring to a boil; reduce heat and simmer, uncovered, about 45 minutes or to desired consistency. and of course you add grated parmesan.

Yes sugar kills, its poison etc., so don't eat a ton of junk food or drink 10 cans of pop, OK?
But it is a necessary ingredient to a good spaghetti sauce. For those who have never heard of this, you don't know "dick" about Italian cooking!
I would use no more than a tablespoon........

None. Use some whole Carrots when cooking the sauce to cut down on the acidity of the tomato.
