I recently bought a wok. After seasoning the wok, I started with my vegetables. They were perfect! I then added the cold rice, it was perfect! However, when I tried to add the egg, it all turned to mush. What is the best way to add an egg when stirfrying? Also, if you have some good recipes, be my guest:)

CHICKEN-CABBAGE STIR FRY

Ingredients:

3 chicken breast halves, skinned and boned
1 tsp oil
3 cups green cabbage, cut in 1/2 inch slices
1 Tbsp cornstarch
1/2 tsp ground ginger
1/4 tsp garlic powder
1/2 cup water
1 Tbsp soy sauce

Instructions:
Cut chicken breast halves into strips. Heat oil in frypan. Add chicken strips and stirfry over moderately high heat, turning pieces constantly, until lightly browned (about 2-3 minutes). Add cabbage; stirfry 2 minutes until cabbage is tender-crisp. Mix cornstarch and seasonings; add water and soy sauce, mixing until smooth. Stir into chicken mixture. Cook until thickened and pieces are coated, about 1 minute.

When you are doing the egg make sure you push everything else to the side first. Before you add your egg make sure you beat it good and add it to the empty side. Do not mess with it for about 30-45 seconds then start chopping it up with your spatula or whatever until it is completely done. After it is done mix with the other ingredients on the other side of the wok.

I do it like vixeneyz... except I put the egg in the middle. Let it set a bit before you go mixing it all up. I love stirfrys.

It's best to just use the egg white add water a drop or two scramble then add

If you will add egg add it in the last 2 minutes of cooking such as if you are making shrimp fried rice.
