Rice, beans, rice & beans, peanut butter, couscous, hummus, peas, corn, green beans, nuts.

It depends if you are substituing potatos (potatoes is incorrect, by the way- just ask Dan Quayle) as an ingredient in a recipe. If so, it depends on the recipe.

If you are talking about a general dietary substitute, any of the afore-mentioned items will do the trick, although peanut butter is really a poor substitution.

Yes, sweet potatoes can be subsituted for white potatoes.
Also, cauliflower can be substituted for white mashed potatoes. This is amazing but tastes just like mashed potatoes without all the calories.

It depends on exactly what you are trying to achieve. You can bake & mash almost any potato.........same goes for making chips. Yo could use Yukon gold, red, Idaho or even purple potaotes in soups & stews. You can use sweet potaotes in many soups (especially great in cream of carrot/squash soup). Or do refer to SUBSTITUTING a potato with another food as a side dish, etc., as in baked porck chops with rice INSTEAD of spuds? Need more info to give you a really right-on answer!

What kind of substitute are you looking for? Nutritious, flavorful, low carb or other?

Nutritious: Sweet potatoes (beta carotenes)
Flavorful: Pasta
Low Carb: Cauliflower
Other: Bacon

will depend on what you are making them with or if you are trying to remove white starches from your diet. Corn is a starch too, try substituting starchy veggies for max flavor.
