EASY POT ROAST, COLE SLAW AND JELLO:
Feeds 3-4

Pot roast:
3 lb chuck roast
1 pkg lipton onion soup mix, dry
1 can cream mushroom soup, campbells
2 celery stalks, diced
1 onion, diced
3 whole carrots, peeled and cut
4 potatoes, peeled and cut in 1/4
1 crushed garlic clove
2 tbsp flour

1 Reynold's slow cooker liner, optional
If using a large slow cooker, a liner makes cleaning up a snap!

If no slow cooker, use a large oven safe pot, add the can of cream mushroom soups, 1 additional can of water, the lipton dry soups, flour and mix the ingredients well with a wisk.

Add the roast and the garlic. Mix around til covered with soup mix. Add the onions and veggies.

If using a crock pot, Add water to barely cover the veggies (remember the water level may go up during cooking!).
Cover and turn crock pot to med/low. Cook 6-8 hours and it will be so tender!

If using a oven safe pot, put in oven covered (with lid or foil) at 325 degrees. Cook for 3 hours. Check on roast. When pierced the juices should run clear. You can test it by slicing the middle. If not ready, cook uncovered for 30-45 more minutes.

Try my recipe for stuffed peppers. It's the easiest thing in the world and so tasty! 4 green peppers 1 lb. lean ground beef 1 egg 1 packet Minute Rice (cooked and brought to room temperature) 3 potatoes, cubed 3 cans Campbell's tomato soup (do not add water) Mix the beef, rice and egg in a bowl with your hands. Cut the tops off the peppers and scoop out any seeds. Fill with beef mixture. Put in a large pot with the potatoes on the side. Cover with the soup and cook for about an hour and a half to two hours if you want the peppers very soft. It's delicious!

one of the easiest things to fix is scrambled eggs

Break eggs into a bowl; allow 2 eggs per person.
Whisk eggs with salt and pepper to taste.
In a heavy skillet over medium heat, melt 1 to 2 tablespoons of butter.
When the butter stops foaming, reduce heat to medium-low.
Add the eggs to the hot pan.
After a minute or 2, when the bottom and edges have begun to cook and solidify, scrape and lift the edges with a spatula and allow the uncooked part to run under the part lifted. Fold cooked parts towards the center.
Repeat the scraping, lifting, and folding until the egg has formed curds. More stirring will make small curds and less will make larger, fluffier curds.
When the curds are firm but still moist, remove to plates or serving dish. They will continue cooking after they leave the pan.
Tips:
For lighter eggs, add about a tablespoon of milk, water, or cream for each egg.
For extra flavor and texture, add minced vegetables and/or ham to the butter and sauté for a few minutes before adding the eggs.
What You Need:
Heavy skillet
Whisk or fork
Eggs
Salt and pepper to taste

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.
