Everytime I make batter-dipped meat, the batter comes off in the frying pan before it's done. What am I doing wrong and how do you make it stick? Thanks!

I use an eggwash then follow by dipping in flour mixture.

make sure that your meat/fish has been patted dry before you dip it in the batter. Also be sure that your pan is deep enough and that you have plenty of oil in it so that the meat can rise as it is cooking. Best to use a proper deep frying pot, with at least 4-5 inches of oil. Your oil must also be very hot...I usually test it by flicking water from my fingers, and listening to it pop. Then the secret is to only fry a few pieces at a time. The secret to proper deep frying is to now let the temperature of the oil drop!

Make sure that the item to be battered is wiped DRY. Also, use club soda as the wet ingredient...it'll make your batter (tempura) lighter and stick better to the food. Then make sure the oil is hot enough and don't overcrowd the pan (make sure you use a pan that is 8+ inches high and at least 12" wide). When done to your liking remove the items and place them on newspaper covered with only a single layer of paper towel......let them drain for a minuet or two, salt then (if desired) and put them on a rack to keep until it's time to eat. I use a nifty "screen rack" that has "square holes" about 1/4" in diameter.....it allows any excess to drain off and doesn't trap the heat and make steam which will ruin your crispy crunch.

what you are doing is having to much wet on your product by dipping in the egg wash you only use the technique when breading a product.. with your batter just dredge your meat or what your battering directly into the batter the product should be dry for the batter to stick and hold........

Roll wahatever you are trying to batter first in some dry flour,then dip in wet batter.

When you make your egg batter, wisk the whites of the eggs first, then add the yolks and after adding the yolks, add a dash of flour to the egg mixture. That's how I make Chili Rellenos.

Depends on the waffle iron. . . I know pam spray has a lot of water in it so it will actually make them stick more. . .They make a waffle off like spray specailly for waffle irons. . especially if its an old fashioned cast iron waffle iron

Always use this technique:
dry, wet, dry

for example:
flour, buttermilk or egg, then seasoned flour

it works everytime!
