That's a very good question, and actually one that I was reviewing earlier this morning. NOTHING makes God a man! God is not man, He is Spirit. Now, what makes "man" refer to God as "He"? Several things: The Bible (KJV), Creation (within the human race, the male is the leading/dominant gender--don't we view God as being leading/dominant?), thereby, our language: "It" is far too impersonal for one who has a deep relationship with (and utmost respect for) The Omnipotent God. "She" would be far too effeminate--submissive, "help meet", creature created from man and so forth. "He" seems most appropriate for the language we speak. Similar gages were used to form the Spanish language ("el" being for "male" and "la" being for "female"). Those things which seemed to possess a stronger presence (symbolically) were given the "el" property.
Also, I've been doing a little research on the original hermaphroditus gender of Adam. Interesting research if you'd like to study with me.

I can't speak for any other religion except Islam, but.....we refer to God as he because the Arabic word for God is Allah. In Arabic every noun has a gender (either male or female). For example Shams (sun) is feminine and Hilal (moon) is male. Everyone knows that the sun and moon aren't human beings therefore they don't have a gender, but in Arabic every word is either male or female based on its characteristics. So the word Allah (God) would be either male or female. The male gender was chosen because men usually have a stronger nature than women and it just makes sense for God to be called "He". Also in the Quran God calls 'himself' HE, but 'He' has stated that he is neither male nor female.

If youre talking about God the Father, he is obviously not of flesh and has none of those things yet retains a masculine identity in a sense.
If youre talking about God the Son, that is Jesus and he walked the earth and was just as human as you or me. But he was also fully God and given all authority. (Matthew 28:19)

I guess I would lean toward the fact that in the bible it says HE gave His only begotten son. And since homosexuality is out of the question for Christians I do not think he would have picked Mary if he were a she. Add that to the fact that He is referred to as the Heavenly Father. We will just have to wait and see I guess.
