I make mine with an Italian recipe. I am assuming you mean a whole artichoke--not just the hearts in the can or jar. You wash the whole thing and trim off any pointy tips of the leaves--trim off the stem.on the bottom.
the stuffing is made from Italian style bread crumbs-- for 4 artichokes-- 2 cups, 3 T parmesean cheese, finely chopped onion (1/3 of one ) 2 cloves of garlic mashed through a press or with a knife, 2 T olive oil, 2 T water if its dry. --mix all &--add more water if it doesnt stick together. take spoonfuls of the stuffing and put it down in between the leaves--fill them up as much as you can --the top and middle ones are looser --easier to fill. the bottom leaves will not pull out enough to stuff. then place in large dutch oven (or a stock pot) with about 1 1/2 inches of water in it--cover and steam them (simmer) for about an hour. Check once in a while--you'll need to add more water. To eat--pull off leaves and scrape off the inner bottom soft part using your top and lower front teeth----just at the end of the leaf. Discard the rest of the leaf. Of course eat the stuffing with them. At the bottom when all leaves are gone--is the heart. Take off the fuzzy things around it, and eat the soft heart. I like to save some of the stuffing to eat with the heart.

I like to peel the leaves off, one at a time, and dip them in mayonnaise...but this is good too!!

Baked Stuffed Artichoke
Serving Size : 2

2 Artichokes
1 cup Bread crumbs
1/4 cup Grated Parmesan cheese
2 tablespoons Assorted fresh chopped herbs (such as parsley, basil and oregano)
2 tablespoons Olive oil
1/2 Tsp Salt
1/4 Tsp Freshly Ground Black Pepper

Trim the artichokes and boil until tender. Remove the chokes and set aside.

Preheat oven to 375ºF.

Combine bread crumbs, cheese, herbs and oil; season to taste with salt and pepper. Carefully spread apart leaves of artichokes, leaving them attached. Pack bread crumb mixture into all available spaces. Place on a baking dish and bake 25 minutes or until golden.

Artichokes are good with

Veggies = a garlic mash potato or glazed carrots.
Meat = beef(steak) or seafood(Salmon/shrimp)
Wine = a lighter wine with seafood and dark wine with beef or lamb

lemon, olive oil, salt pepper and some mayo....mix together, and dip artichoke bottoms into it....yum!!!

We like them steamed with melted butter. I've also heard of mayonnaise.
