it has a high specific heat capacity meaning that it requires more energy to change the temperature one degree per volume. This is due to the polarity of water and its resulting hydrogen bonds. The hydrogen bonds between each water molecules hold the molecules tighter together thus it resists more of a change in energy (temperature).
