For a start do you use tomato paste or sauce? DON'T! Make your sauce using real Roma tomatoes, that will dramatically improve the flavor!
I use a combination of 1/2 ground beef, 1/4 ground pork, 1/4 ground veal for the meat sauce. I also add several strips of smoked bacon (chopped and cooked.) Then also add either sliced Italian sausage, beef or breakfast sausage.
Mushrooms are a must, sometimes sliced black olives, lots of chopped onions, twice as much chopped, crushed garlic as you would normally use.
A very good blend of Italian spices is a must! You can simply make you own from good Internet recipes!
For the cheese mix, ricotta cheese (or cottage if you have to substitute) Mozerella or Manchego, Parmisano and if you have it Romano. I usually use about 50% more cheese than the recipies calls for. (Because I use "no-precook" lasagne pasta I add a mix sour cream, cream cheese and water to the cheese mix for moisture, about a cup and a half to 2 cups. This also adds excellent flavor.......)
(My lasagne is known as the "Incredible Five Meat, Five Cheese Lasagne" and before I serve, I will need to see a permission slip signed by your cardiologist....)

I do love cooking with wine! distinctive wine for various ingredients too! MM some spaghetti sounds rather reliable precise now with a deep crimson Cabernet in the sauce could be superb to heat the bones yet I even have eaten and the holiday journeys are close to i'm looking forward to the rooster on the table and there will be no wine this 12 months :)

Try making a white lasanga. I have made one before layering white meat chicken, ricotta cheese and portabello mushrooms. Use an alfredo sauce instead of a red sauce and if you dont' like mushrooms try adding spinach in the layers.
You can also go vegatarian with it you won't miss the meat. Use eggplant that has been slighty fried like in parmesan but layer it with a red sauce, ricotta and other veggies. It is so filling you dont' even know that meat isnt in it.

Try making it with a spicy sausage instead of ground beef or mix the two together, Also add a layer of mild green chili. Or use a papper jack cheese for a little milder flavor.

When cooking Ur mince add a little Tabasco, a few dashes of lee and parings, some tomato sauce or a tin of chopped tomatoes and a diced onion

Try mixing some parmasan cheese and a drop of red wine with the mince,or some garlic paste gives it a kick as well

My wife buys ground spicy Italian sausage and mixes it with lean burger half/half. This adds quite the kick. And always include a layer of ricotta cheese!

My recipe calls for hot Italian sausage and lots of fresh thin slices basil in the sauce. if you don't want to make your own sauce then Barilla baking sauce is really good, just add the sliced basil to the sauce and make sure it is not exposed or it will burn and get bitter.

i put diced mixed peppers in mine ,
tin of tomatoes, puree,stock ,mince,onions,garlic,italian seasoning and peppers boil then simmer (im sure you have recipe just telling mine) if you are using dry pasta it does not need to be cooked but i boil mine to make it softer ,the dish i put pasta on first then bolognaise then white sauce and then pasta ,bolo and white repeating until dish filled ending with sauce add grated cheese serve with salad or chips and garlic bread ......... i love lasagne why not share the recipe u use

If you really want something different, use Chorizo and cheddar cheese instead of Mozzerella. Yes, it mixes two ethnicities of foods, but if you like a little spice, it is to die for...
