Actually, yes and it would be quite tasty. Don't put too much though or it could be too moist.

My mom always made this salad with carrots, raisins and pineapples and it was totally off the hook!! You should try it too. But any dessert with pineapples can't be bad.

Or maybe I'm just biased because I love pineapples sooooooooooo dern much!!!

Yes, it adds much needed moisture. Also, if you are using a box mix, add an additional cup of fresh shredded carrot. But pineapple in carrot cake will make it much more moist when it comes out of the oven.

i tried it, it is quite good when it is hot, but when it cools down it tastes really nasty. I thought it is because of the pineapple.

yeah most recipes i have seen use pineapple in carrot cake... it is not unusual

Only way I have ever made then and I have made alot, moist and sweeter and if you use the cream cheese frosting like I do it is DELICIOUS!!!
