why palak(spinach) tastes bitter when i prepare palak paneer?

pls suggest a palak paneer recipe which doesnt come out to be bittter?

Try to buy fresh spinach,without any holes in the leaves.It only tastes good in winters.Every other season it is bound to loose its
flavour and taste bitter.In off season try not to worry about the nutrition value and drain out the water left after boiling.Go ahead & use your own recipie after this.I'm sure it will turn out fine.You can try adding a spoonfull of fresh malai when grinding it to a paste for a richer taste.

Palak Will turn bitter when cooked with other ingredients ...meat or vegetable.....
Here's Trick 1......
Wash your spinach....cut in the way u need it..and blanch it or boiul it with salt and little butter for about a minute...not more than that.Immediately refresh this under running cold water...this is to stop it from cooking furthur....for colour and nutrient retention.
What u can do is cook the begetables or meat seperately and mix this cooked spinach to your ingregients.
Here's Trick 2.......
In case u cook spinach and meat or vegetables together.....you have a darker spinach preparation,and a little bitter one.
Mix cooked spinach puree or paste to this and give it a boil to finish the preparation....and see the difference :)

Perhaps the paneer has become palak now, and palak gave space for paneer to be bitter, so that the palak of your paneer will be like that.

are baba u boil palak in water after its cooked then water ko fek do simple use only palak not that water kadwa paan sab pani ke saath chala gaya happy make acha palak paneer and send to me enjoy lol.......

Try using half spinach and half escarole. The results should be excellent. Alternatively, you may boil the spinach and squeeze out the water.
