You could make either some spaghetti & meatballs (buy premade from walmart) and garlic bread or you could make baked ziti and boil the noodles and mix it with ricotta and mozzarella cheese, plenty of garlic and sauce, top it with mozzarella and bake it for 30 min. MMMMMMMMM
Pasta is usually a fast, easy dinner. Chicken, too.
You could make chicken fettuccine if you have premade fettuccine sauce. Just cook the noodles, heat up the sauce and bake the chicken and cut into bite size pieces and mix it all together. YUM-O!

7-Minute Dinner Easy, Cheesy, Frittata:
4 eggs
2 egg whites
1 cup part-skim ricotta
2 tablespoons water
1/2 cup chopped pimientos, drained
1 cup 1 cup corn kernels (canned, drained, or frozen and thawed)
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon butter
Prep: 2 minutes
Cook: 5 minutes
1. Preheat broiler to high.
2. In a large bowl, whisk eggs, egg whites, ricotta, and water until creamy. Stir in pimientos, corn, salt, and pepper.
3. Melt butter over medium heat in a 10-inch ovenproof nonstick skillet (cast iron works really well). Pour the egg mixture into the skillet. Cook for three minutes, until the bottom and sides of the frittata are set. Don't stir!
4. Carefully remove skillet to the broiler and cook six inches from the heat source for two minutes, or until the top is golden and set. Cut into four wedges. Serve with chips and salsa.
TIP: Swap herbs, mushrooms, or spinach for the corn and pimientos. Or try a sweet version: Instead of pimiento, corn, salt, and pepper, and 1 Tbs of sugar. Cook as directed. Serve with strawberries.
Yield: 4 servings

COLD NOODLES IN SESAME SAUCE
1 lb. thin, flat noodles
4 qt. water
2 tsp. salt
6 scallions, green and white, cut
2 tbsp. soy sauce
1 tbsp. hot sauce
1 tbsp. sesame oil
1 tbsp. rice vinegar
1 tsp. sugar
1 clove garlic
1 tbsp. peanut oil
1/3 c. toasted sesame seeds
Cook noodles in rolling boiled water until al dente; drain and rinse under cold running water. Combine all other ingredients and pour over noodles. Serve at room temperature. Toss again before serving.
I would suggest doubling the sauce mixture, because if you use 1lb of noodles, then theres not enough sauce also dont use chicken broth use water, it makes it less saltey. This is an excellent dish, and is one of my favorites!
Its easy to make, and most people can make it without having to go to the store!

potato chip sandwiches!
make a sandwich of mustard, pickles, tomatoes, a giant layer of ruffles potato chips and ketchup. Smash down the potato chips with the other piece of bread! it sounds weird, but i used to eat it in ireland all the time. so good...

Fry 1lb of hamburger with one medium onion diced drain hamburger add one can of cream of mushroom soup and one 8 oz. container of sour cream salt and pepper to taste serve over extra wide egg noodles

Homemade mac n cheese with chicken is good, cheap, quick & easy.
4 pieces of chicken either baked then deboned & cut up or cut up then fried.
1 pkg cooked macaroni
1-2 cups grated cheese (depends on ur personal preference.
Take a casarole dish (Large rectagular) & put about a 1/4" of milk on the bottom. Then alternate layers starting w/ macaroni, cheese then chicken repeat until dish is full. On top sprinkle salt & pepper to taste and I like to add a dash of paprika. Put in the oven at 325 for aprx 45 mins.
Its a great dish to prepare ahead of time so all you gotta do is throw it in the oven when you get home.
My hubby and I had to work a lot when we first started out. on my weekends I used to just cook the meat and freeze it, defrost the day before i planned to use it, so when I got home all I had to do was heat up the meat (steak, chicken, pork) then add veggies and a side, dinner in 30 mins or less.
Another good easy dinner is taking 1/2" thick steaks and put shake & bake mix on a plate press the meat onto the shake & bake (both sides) then fry it up, make mashed taters and kernal corn, buy country gravy mix ( next to Lawrys seasoning at the grocery store just add milk or water) pour over top the steak and taters and u got a homemade chicken fried steak dinner. It s pretty easy and quick.
A healthier quick dinner would be most fish fried, fresh squeezed lemon & pepper to taste, is good on almost any fish, a veggie side, and a cold cucumber and tomato salad with balsamic vinigrette (a salad dressing).
you can eat a lot of the same meat just find new ways to flavor it. Or try ethnic dishes.
Fajitas are good and surprisingly easy.
Cut up steak or pork in strips, 1 can of diced green chilies, 1 orange bell pepper cut in strips, 1 med onion minced or diced, fry in skillet.
lipton/Knorr makes a tasty chipotle rice that cooks in 8 mins just add water and 1 Tbsp of oil cook in saucepan, then heat up tortillas on stove top directly on burner, be careful it only takes 15 secs or so on ea side & use tongs to save ur fingertips.
take the tortillas put rice in first then some of the meat mixture repeat to all tortillas and u got an easy mexican style dinner.

Crock Pot Chicken and Dumplings
4 boneless skinless chicken breasts, cut in small chunks
2 cans condensed cream of chicken soup
1/4 cup onion, finely diced
2 cups water
1 chicken bouillon cube
2 10 oz packages refrigerated biscuits
Combine all ingredients, except biscuits, in a crock pot. Cover and cook on low for 5 to 6 hours. 40 minutes before serving turn crock pot on high. Tear or cut biscuit dough into 1-inch pieces. Add to your crock pot; stirring gently. Cover and cook on HIGH for an additional 30 minutes or until biscuits are fluffed up and cooked through.

Buy already made salad,cucumbers,mushrooms,and cheese,throw some sald dressing on very light and it is almost alll free foods and no calories and fast!yummy!
