The beauty of South Beach is that you don't have to count carbs, fat, calories, etc. I'd strongly suggest buying the book (it's in paperback now, so it's cheap) and reading up on the principle behind it. Basically, you focus on foods that are okay for you to eat, some of them in any amount (especially most vegetables and later most fruits). Lean proteins are very important, which is why fish, poultry, eggs and low-fat dairy are so important.

There are lots of South Beach recipe books out there, so I'd recommend getting one and cooking from it. Regardless of what level of the diet you're on, there are lots of options.

To lose weight, a person has to reduce the calorie intake by some amount by modifying their diet. A diet without sufficient nutrients will only increase the appetite of the person trying to lose weight. Since most people combine a diet with an exercise plan, additional nutrients are required for the growth of muscles required to increase the metabolic rate required for long term weight loss. I do Atkins and as far as I am concerned the low carb way of eating has saved my life. Since I am more familiar with Atkins I really cannot go over this diet with you except to share that what helped me is to get the book and read it and this website.

This site has a section for each low carb plan plus forums to ask any question and forums just for fun. I am on this site way more than I should be. LOL!

The South Beach and Atkins and those type diets are now in disfavor except for diabetics requiring low sugar diets. Eat and enjoy.
