This might be a bit heavy for a "light" dessert, but it's my husband's request each and every time. It's called Better Than Sex Cake:
Better Than Sex Cake
This cake is seriously OUT OF THIS WORLD! This is chocolate devil's food cake, drizzled with a caramel glaze and topped with candy bits & cool whip. You will NOT regret trying this one! Nobody will EVER know that it's low-fat!
Ingredients:
1 box Devil's Food Cake mix
6-oz fat-free caramel ice cream topping *
7-oz fat-free sweetened condensed milk
1 cup Skor Bar or Heath Bar bits (found by the choc. chips)
1 container fat-free cool whip
Directions:
Mix cake mix. Bake at 375 degrees for 35 minutes or until toothpick comes out smooth in a greased 9x13 pan. Take cake out of oven, leave in baking pan.
With a chop stick, poke holes all over the top. Pour the condensed milk over warm cake, filling in the holes. Repeat with the caramel topping.
Sprinkle Heath bits over the top, reserving some for the top.
Cool completely.
Frost with container of fat-free cool whip and sprinkle with remaining heath bits.
Put in fridge until ready to serve.
Yields: 24 servings

In a pan with butter saute either bananas or peaches , add Grand Mariner liquor and right before serving this over vanilla ice cream. Fancy but simple, elegant and delicious. Its like the flambes made at French restaurants.

You'll love this! It's light and very very easy to make make. Take chocolate grahm crackers and layer them with chocolate pudding (you can buy tubs of pudding for those who are REALLY busy, or lazy like myself). Gram cracker, pudding, gram cracker, pudding, ect until it is as high as you want it. It should look like a chocolate brick. Let it sit over night!!! Cover the top with mini marshmallows and stick it in the oven to melt and brown the mellows just before serving or simply cover with whip cream. Yummy!

I think a lovely yet simple strawberry shortcake, (with home made shortcakes, fresh and also frozen strawberries, and home whipped cream) is a no fail perfect dessert. For that special added touch - serve it totally naked,

This is a dessert me and my mother use to make back in the day. Hope you enjoy. I'll work up the nerve and try it myself again. come to think of it we used peanuts instead of almond slivers.

For folks like me who simply abhor any type of cooking, this one is easy. Get a can of Eagle brand condensed milk. Bring it to a boil and let it cool naturally. Once cool, open it and pour it over fruit. It's wonderful, kind of like caramel.
