Rinse them then marinate in some red wine. Put some Marinara sauce in a fry pan with a little red wine and Italian spices. Add the scallops and simmer. Serve over fettuccine noodles.

Whatever you do don't use the big U-10's. They're bitter. Bays are the sweetest. I used to make a simple garlic butter with sauteed mushrooms, throw in the scallops and bake them. Serve over pasta.

Now our fave is a Cajun cream scallop dish on pasta. Tons of things you can do with them!

Make sure you get nice fresh scallops that are NOT bay scallops. Bay scallops are hard and not fit to eat . I love fried scallops and do them a lot. Just soak them in a well beaten egg while the oil gets hot. Put them in a ziplock bag with some fine cracker crumbs and coat them with crumbs. Put in oil that is frying temp. 3 minutes is enough. Drain on paper towel or brown paper. Serve with Cain's tartar sauce. Delicious with french fries.

This is about as easy as you can get.
Broiled Scallops
1-1/4 lbs. sea scallops
2 Tbsps. olive oil
1/2 tsp. lemon pepper
1/2 tsp. garlic powder
1/2 lemons, cut in wedges

Turn on broiler. Brush scallops with oil. Sprinkle with lemon pepper and garlic powder. Broil about 5 minutes until scallops are opaque. Serve with lemon wedges.

Hope you like it!

Wrap them with bacon and cook them on a stove top grill pan or broil them in the oven. Serve with sauteed spinach or bokchoy. Make sure they are colossal sea scallops.
