try a Sauterne - this is an excellent French wine that goes marvellously with liver. I mean foie gras.
Id you're talking about liver and onions, I mean grilled for example, then red wine is your best bet.

If you are of age. I'd say beer. Liver and onions is popular in Pubs. Non Alcoholic, go root beer, its delicious.
