The nutritional qualities of soyabean are completely in line with the values of modern life styles – protein richness, high poly-unsaturated fat content and absence of Cholesterol and Lactose. Soyabean contains about 40% protein of high biological value. The soya-protein is an excellent source of all the nine essential amino acids vital for body growth, maintenance and reproduction. It is also a good source of minerals and vitamins. The oil contents of soyabean (20%) have high level of poly-unsaturated essential fatty acids, linoleic, linolenic & lecithin, which are important in fat metabolism.
Soyabean is easily digestible and highly palatable. It is rich in lysine, an essential amino acid, which is very low in other cereal grains such as rice, wheat and corn. Thus, cereal grains and soyabean together constitute a complete and balanced source of human nutrition. For this reason of complimentarity, the Brazilian and the Mexican diets have long been based on soyabean.
The Chinese have called soyabean ‘YELLOW JEWEL’ and the Americans considered them as ‘THE CINDERELLA CROP’. For Japanese, soyabean is sacred for the soul as well as for the body. The Western diet is built up mainly on soyabean.
Thus, the soyabean story is an illustration of the right commodity in the right place at the right time.

As with all things, soybeans are best eaten in moderation. Many of the modern processing techniques for soyabeans do NOT remove the toxins and estrogens from the soybean. It is a common myth propagated by the food industry that soyabeans are the complete food. See the link below for more info.
