The whole saying is, "Curiosity killed the cat - satisfaction brought it back". It's more about nosey people than cats.
Curiosity galls the naturally inquisitive. If something distracts their attention, it is like an itch they cannot scratch; and if they get the answer, they return to what they had been doing previously. But until then, there is no reasoning with the nosey. They have to know, and even if it gives them a bloody nose in the process, by hook or by crook, they /will/ know.
Why cats? Cats are some of the most naturally curious creatures on record, since they have such sharp senses and a predatory zeal; they have to hunt. It's in their nature.

I don't think "curiosity killed the cat" is anything to do with cats being known for being curious. It's a trick, because cats AREN'T particularly well known for being curious. So the person you say it to replies "How did it?" and then they realise they've been tricked into being curious, again, when they've just been told it can be dangerous.
