Unfortunately, I don't have as many options as i would if he was at home. The day care doesn't not heat anything up for him. So it has to be ready to serve. Any ideas???

Use more leftovers... chicken or other meats from the night before are usually a hit. Some kids like cold mashed potatoes or macaroni and cheese mixed with just about anything they will eat in the way of meat or vegetables too.

Most kids love tortillas and cheese & bean burritos are a favorite around here... even cold. Almost anything will wrap up in a tortilla and it doesn't have all the yeast and preservatives that are normally found in store bought bread these days. Just heat the tortilla and filling, make the burrito, then roll it in a paper towel and wrap with foil if you want it to be warm at lunch. I don't use egg or chicken for the warm ones... I make scrambled egg mixtures and chicken fillings the night before and just cook the tortilla prior to filling to reduce the risk of them 'going bad' during the hours before lunch.

Try peanut butter and banana for a healthy change. If you use packaged lunchmeats, add a little dried fruit & nuts mixture as a side snack being careful to cut or break up the pieces to prevent choking... You can get them at Sam's for a reasonable price and mix them yourself to economize. Also add some fresh fruit when you can... you can cut most of it up and put in a sandwich bag for easy eating. Apples should be kept whole since they will turn dark when cut.

I make lunches for my husband and have the same problems... picky eating habits and boredom with the 'usuals', but don't want to load him up on preservatives and empty calories either. These are some of the things I have used to keep him happy and eating healthier! Hope they give you some ideas too!

Things that you can dip in other things are fun.

My mother use to just cut my PB&J into different shapes sometimes to keep the interest level up.

Also I use to love when my mother would put some dry cheerios in a bag for me to eat like popcorn. Sometimes she would put in Honey Comb in the bag and if I was really Lucky I would get some Lucky Charms.

I still like to dip things in some sort of sauce, I bet you could talk with your child and come up with something fun.

Have a Great Day !!

Maybe look for a different daycare.
My son used to go to one where they served hot meals.
It's difficult to find enough variety that a 2 year old will actually eat in a brown bag lunch.

I would suggest making food fun, cut sandwiches in different shapes, circles, triangles, etc. Lots of finger foods and things to dip them into. Use food coloring to 'color' or draw pictures on the bread of sandwiches. The suggestion for 'ants on a log' is a good one. Come up with different ideas like that to make lunches fun.

Uncrustables have several different varieties out now. Also what about Luchems? Those things with the crackers, meat, cheese, and cookie. That come in many different varieties(nachos, pizza, hotdogs) too and they do not need heat up.
