It would depend on the type of cheese. Some cheese is for eating and some is for cooking. If it is frozen it may have water built up in the form of frost. A good fresh cooking cheese should melt fine. Yes, it works very well in a crock pot and is great for nachos.

Yes, cheese works fine melting in a crock pot. Swiss cheese has a nice texture melted, but Cheddar can separate if you're not careful. I would cut the block cheese up if poss. Freezing and melting doesn't seem to change things. Enjoy your chili, sounds yummy!

If I'm going to melt non-Velveeta cheese, I will make it more as a fondue by mixing a little milk with corn starch or baking powder to make a paste, and then add the cheese. It turns out quite good actually.

velvita cheese will melt in a crock pot. regular cheddar wont do so well.
i usually put chili with the velvita and use it as a chip dip.

It works, and don't worry if it separates. After it's melted I just add some milk to smooth it out and sometimes cream cheese as well.
Don't add the milk too early or cook it too hot or too long or it will curdle and you'll have a mess to throw out.

defrost and make cheese sauce* with them if not they will separate and you'll have the bad results you predicted *cheese sauce 2tbls. melted butter with2 tbls. flour added over med heat til combined add 1 cup milk whisk til boiling and thickened remove from heat and stir in as shredded cheese (1 block) /enjoy

If you're not in a hurry, let the cheese melt then grate it. Frozen cheese crumbles very easily.

It will melt,put some "Ro-Tel" tomatoes in with the cheese,if you like it spicy.They come in a can!
