SPAGHETTI SQUASH
(4 pound) spaghetti squash
2 tablespoons extra virgin olive oil
1 cup grated Romano
Salt and lots of coarsely ground black pepper
To microwave squash, cut in half and seed. Place 1/4-inch water in a microwave safe dish. Place squash in dish, cut sides down -- sides will overlap. Cover with plastic wrap and microwave on high power 13 minutes. Reserve 1/2 cup liquid in a bowl. Shred squash and add the "spaghetti" to bowl with liquid.
To boil squash: cut in half and scrape out seeds. Boil squash until tender, 15 to 20 minutes. Place 1/2 cup cooking water into a bowl, then drain and shred the squash. Transfer to a bowl with reserved liquid.
Toss squash with reserved liquid and dress with extra-virgin olive oil, lots of cheese, salt to taste, and lots of black pepper. Serve.

An easy way to cook spaghetti squash is to split the squash lengthways remove seed, and wash, pat dry, place a tablespoon of butter in each squash half and bake for 1/2 hour in a 350 degree oven.
With a oven mit hold hot squash over a serving bowl and fork the squash strands into bowl and serve.

SPAGHETTI SQUASH WITH SPINACH AND CHEESE
1 lg. spaghetti squash
1 (10 oz.) pkg. frozen spinach
8 slices bacon, cooked and crumbled
6 oz. creamed cottage cheese
2 tbsp. butter
2 tbsp. flour
1 c. milk
1/4 - 1/2 tsp. nutmeg
1 tsp. chicken bouillon
Salt and pepper
1 c. Cheddar or Swiss cheese
Cook squash. Meanwhile, cook spinach only until thawed, drain well. Combine with bacon and cottage cheese. Season with salt and pepper and set aside.
Prepare white sauce. Using a fork remove squash strands into a large bowl; add seasoned white sauce and toss to combine well.
In casserole dish, layer half of the squash mixture, half of the spinach mixture and sprinkle with half the grated cheese; repeat layers. Bake at 350 degrees for 20-30 minutes, or until bubbly. Six main dish servings.

What we do is cook squash in microwave, scrape it out & top with butter, salt, pepper & freshly grated parmesean cheese. Delicious!
