Chinese Recipe - Fried Shrimps Chinese Style
1 lb. lg. shrimp, in shells
1 tbsp. light soy sauce
1/2 tbsp. dry sherry
1/2 tsp. grated fresh ginger
2 tbsp. peanut oil
2 cloves garlic, chopped
3 green onions, chopped
1 tsp. salt
1 tbsp. sesame oil
Directions:

Marinate the shrimp in the shells for 15 minutes in the soy sauce, sherry and ginger. Drain.
Heat peanut oil in a wok. When oil is ready, fry garlic until fragrant.
Add shrimps and stir fry until the color changes. Add the green onions. Add the salt and sesame oil. Toss until the onions barely wilt. Serve hot. Let each guest remove the shells at the table. Serves 6 as part of Chinese meal.

I've never seen shrimp fried in the shell. Sometimes the tail shell is still on....

Here's a recipe for Chinese fried shrimp




Chinese Recipe - Chinese Fried Shrimp

Serves 4

Ingredients:

* 24 lg. shrimp
* 1 c. flour
* 3 tsp. baking powder
* 1 c. cornstarch
* 1/2 tsp. salt
* 1 egg, beaten
* 1 c. ice water
* 2 tsp. vegetable oil
* peanut or vegetable oil for deep frying

Directions:

1. Shell and devein the prawns, leaving the tails on.
2. Sift flour, cornstarch, baking powder, and salt into a mixing bowl. Beat in egg, water, and 2 tbsp. of oil. Make a stiff batter.
3. Heat 2" of oil in a large electric skillet, at 375°F.
4. Dip the prawns in the batter, and fry in hot oil until golden brown,
turning occasionally. Drain on paper towels.
5. Arrange on serving platter in a circle with the tails pointing
outward.

INGREDIENTS:
1 1/2 pounds boiled shrimp
2 cups milk
1 egg
flour
cornmeal or bread crumbs
1/8 teaspoon salt
dash pepper
PREPARATION:
Mix milk with egg; add shrimp and let stand for 3 minutes. Mix equal parts of flour and cornmeal or bread crumbs with salt and pepper. Coat shrimp well with mixture. Cook shrimp in hot deep fast at 375° until golden brown. Drain on paper towels.
Fried shrimp recipe serves 4 to 6.

We have different kinds of fried shrimp recipes and here is a easy one with taste of salt & garlic.

<<<<<<< Stir-fried Salty and Crispy Prawns >>>>>>>>

600g tiger prawns, with shell
3 gloves garlic (finely chopped)
2 small Thai red chilli (seeded, finely chopped)
green onion (finely chopped)
1/2 cup cooking oil
1/2 egg white (slightly beat)
1 teaspoon of cooking wine
1/2 tablespoon cornstarch
1/2 teaspoon salt
a dash of five-spive powder
a dash of white pepper

1) Rinse the prawns and pat dry, cut off antennae and all appendages from the prawns (still in shell), dry the prawns with paper towel. Beat the egg white, mix with cornstarch, cooking wine and white pepper then marinate the prawns with the egg white mixture for about 15 minutes, drain and set aside.
2) Heat the wok in high heat, then add oil till hot, reduce heat to medium high, deep-fry the prawns for 1.5 minutes or until the shell is crispy, remove from wok and drain.
3) Remove oil from the wok, reheat the wok then add 1 tablespoon oil, stir fry garlic & chili till fragrant, add salt and five-spice powder to the wok/
4) return prawns in wok and stir quickly for 1 minute or till mix well. Turn off the heat.
5) Sprinkle green onion and transfer to a serving plate, serve immediately

Note: if you do not like the taste of five-spice powder, you can reduce the salt to 1/4 teaspoon in step 3, then, mix 2 tablespoon of soy sauce + 1 teaspoon of sugar and sprinkle the mixture into the wok, continue to step 4. The flavour is different.

Tips: Use the kitchen scissors to cut the shell of the prawns (the back of the prawns) when you devein them, so that the meat would absort the marinade and the flavour.

My father likes the ketchup fried prawns which is similar:
Reduce the salt to 1/4 teaspoon in step 3, return the prawns to the wok, stir fry for 30 seconds, then add mixture of ketchup into the wok, stir fry for 1 more minute or till the sauce is thicken, go on to step 5. (this way of cooking, the shell would not be as crispy as the the first recipe's)

Ketchup sauce:
2 tablespoon of ketchup, 1 tablespoon of soy sauce, 1.5 tablespoon of sugar, 1.5 tablespoon of water, 1.5 teaspoon of cornstarch (mix well before you pour it into the wok)
