I made these a few months ago, and they taste just like they do at the chinese restaurant! Quick, easy, cheap, and delicious!
Crab Rangoons
1 (3 ounce) package cream cheese, softened
2 green onions, finely chopped
1/4 cup finely chopped imitation crabmeat
1 teaspoon minced garlic
16 wonton wrappers
oil (for frying)
sweet and sour sauce (optional)
1. In a small mixing bowl, beat cream cheese until smooth. Add the onions, crab and garlic; mix well. Place about 1-1/2 teaspoons in the center of each wonton wrapper. Moisten edges with water; fold opposite corners over filling and press to seal.
2. In an electric skillet, heat 1 inches of oil to 375°. Fry wontons for 1-2 minutes or until golden brown, turning once. Drain on paper towels. Serve with sweet-and-sour sauce.
3. NOTE: Fill wonton wrappers a few at a time, keeping the others covered with a damp paper towel until ready to use.

Chinese Recipe : Crab Rangoon
1/2 lb. cooked crab meat or smoked salmon, lightly flaked
1 tsp. scallion, finely-minced
1/4 lb. cream cheese, at room temperature
1/2 tsp. steak sauce
1/2 tsp. garlic powder, or 2 cloves minced garlic
1 lb. won ton wrappers
1 beaten egg, or 2 egg whites
3 c. vegetable oil
Directions:
Combine crab meat or smoked salmon, scallion, cream cheese, steak
sauce, and garlic.
Place 1/2 tsp. of mixture in center or wonton wrapper. Fold square over to form triangle. Lightly brush the center with the beaten egg. Bring opposite corners together, and press gently so filling will be secure.
Place oil in wok, and heat to 375°F for deep-frying. Deep-fry one crab or salmon puff, and adjust heat downwards if necessary.
Fry rest of puffs until delicately brown, less than 2 mins. Serve hot.

I use cream cheese and sour cream... 3/4 cream cheese to 1/4 sour cream for the ratio....
Why not make 4 different kinds : add garlic to one, crab to another, onion, etc... so on and so forth... you will get your favortie recipe that way ! Works for me everytime with every recipe... process of elimination ! : ) Happy cooking !
