Im staying at Newark airport but looking to travel into NYC and Im sure there will be late night returns back to the hotel. I know there are buses and/or trains but do they run all night? I'll be staying Fri and Sat nights. Thanks for any help.

trains run until about 2 am same as busses otherwise you will have to take a taxi or shuttle check out the path train schedule or NJ transit to see when the last train leaves penn station

check with you hotel. If you're not staying at a hotel, I've already told you how to get around from Newark to NY in the question you posted before about the subject.
I'm sure transportation runs 24 hours, but maybe, at night, intervals between bus and bus are longer. Check NYC transportation website

$14 will get you a ticket that goes from Penn Station to the Newark Airport stop on New Jersey Transit, and then shuttles you from the airport stop directly to the airport terminal (the train itself does not stop directly in the airport). You should take the Northeast Corridor line for this, which runs regularly all day, with a small gap between 2am and 4am.

The Airtrain runs from GSS under Madison Square Gardens to Newark (EWR) airport. It's like $6

The Amtrak goes through Newark from DC, Baltimore, and Philadelphia. I don't know what people do to get on it or whatever, but those trains run all night.

They charge a top rate to get on and rancid the practice on the airport. See if the motel trip will take you Penn Station in downtown Newark. you may take the course practice for $2 each way.
