Behind the bar and also mingling with the customers. Perhaps sitting with regulars.
I wouldn't expect him/her to stand behind the bar all night, if that's what you mean.

Depends on the bar... when i worked bar, on quiet nights I was allowed to go out and mingle with the guests...
