Maple Pecan Pancakes
Serves 4 (4 Pancakes per serving)
3 Seconds Nonstick Cooking Spray
1/2 Cup Eggbeaters
1/3 Cup Heavy Cream
1 Tsp Maple Extract
1/2 Cup All-Purpose Flour
2 Tsp Sugar Substitute (recommended: Splenda)
1 Tbsp Wheat Germ
1/4 Tsp Baking Powder
1/8 Cup Pecans, chopped
Instructions:
Grease a griddle or large pan with nonstick cooking spray and heat over medium heat.
Mix all the ingredients, except the pecans, in a blender for about 15 seconds. Stop and scrape down the sides with a spatula, and continue mixing for another 15 seconds until well blended.
Pour approximately 16 mini-cakes onto the hot griddle, and sprinkle each with a few pecans. Cook on each side for 1-2. Serve hot with melted butter or top with 1 Tbsp of Fresh Whipped Cream.

Fresh Whipped Cream
Serves 12 (1 Tbsp per serving)
1 Cup Heavy Cream
1/3 Cup Sugar Substitute (recommended: Splenda)
1 Tsp Vanilla Extract
Instructions:
With an electric mixer on high, whip the heavy cream just until frothy. Then add in the sugar substitute and vanilla extract and continue to whip on high until peaks form. Be careful not to over-whip, or cream will break.
Store in an air tight container and refrigerate.

Pumpkin Puff Pancakes
Makes 14 four-inch pancakes
1 cup all-purpose flour
1 tbsp sugar
2 tsp baking powder
½ tsp salt
½ tsp ground cinnamon
1 cup milk
½ cup canned pumpkin
2 slightly beaten egg yolks
2 tbsp cooking oil
2 egg whites
Combine flour, sugar, powder, salt, & cinnamon in a large mixing bowl. In another mixing bowl combine milk, pumpkin, egg yolks, & cooking oil. Add pumpkin mixture to flour mixture all at once. Stir just till blended.
Beat egg whites till stiff peaks form (tips stand straight). Gently fold beaten egg whites into pumpkin mixture.
Pour 1/4 cup mixture into a large frying pan coated with nonstick cooking spray over medium heat. Allow pancakes to cook for 3-5 minute or until golden brown. Flip pancakes and cook for another 3-5 minutes or until golden brown. Repeat this process until you batter is used up.
Serve with Hot Cider Sauce.

Hot Cider Sauce
Makes 1 cup
3/4 cup apple cider or apple juice
1/2 cup packed brown sugar
1/2 cup light corn syrup
2 tbsp margarine or butter
1/2 tsp lemon juice
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg
Combine all ingredients in a medium saucepan. Cook & stir over medium heat until sugar dissolves and mixture is bubbly.
Simmer mixture about 20 minutes more or until reduced to 1 cup, stirring occasionally. Let stand 30 minutes before serving to thicken slightly.

Well, the real problem is that without eggs, your options become limited.....
I live in Mexico and down here, they don't have a "bacon and eggs" fixation. While pancakes and cereal are popular with the kids, the average Mexican is quite capable of eating just about anything, (especially leftovers) for breakfast! (I myself still love my English-style fried eggs with toast, bacon or sausages)
My wife and son just left for school and work a couple hours ago, he had a big cheeze and beef burrito and she ate fish chowder and chicken tacos. Maybe looking beyond the traditional "English" breakfast will help!

Get a little more healthily and don't eat so much bacon. During the winter months that will soon be here, hot oatmeal sticks to the ribs and is so good for you. Serve it with some fruit like frozen blueberries or strawberries. Kids love it. Whole wheat toast and some juice or milk to drink. Sometime when your making pancakes try adding chocolate chips!

Maybe stop the bacon for a bit. Try crepes -- you can put anthing in them -- jam, mushrooms, fruit. One egg whisked with a dash of salt, blend in 2 tablespoons of flour until smooth, add milk slowly until the mix is a pale yellow. Heat a frying pan and sling in a small amount of butter to coat. pour in a small amount of the batter, pick up the pan and swirl so that the batter forms a thin layer on the pan. Wait a few seconds and flip the crepe. Count to ten. Flip it out. Put in a warm jam or fruit filling. Roll it up.
Better yet -- try oatmeal with bananas and cinnamon!

You could make pancake dippers, make some thin pancakes(can make them the day before) spread with cream cheese or peanut butter and or jelly and roll them up like a burrito. Heat them up for a few seconds in the microwave and they can be dipped in syrup. You can be creative and add other things, like bacon, raisins, sausage or Cinnamon sugar. Kids love them!

Oatmeal is good, because it lowers your
cholesterol. I put brown sugar and no calorie
syrup and a little milk on mine. You could also eat a cantaloupe and a blueberry muffin. (fruit and fiber). I also like to make home-made Egg McMuffins.
One fried egg ,on a toasted muffin with a piece of fried canadian bacon and a melted piece of cheese. It's a lot cheaper to make them instead of going out and buying them!

sounds complicated but this is really easy,i was in the same predicament you were... so sick of the same old things,this is my version of eggs benadict,this is a recipe to feed two people
all you need for recipe is two poached eggs(not runny)
one toasted and buttered english muffin
two slices of sandwich ham or two peices of canadian bacon browned on both sides just to make it hot(can also use cooked regular bacon)
country gravy,i just use the instant package it is quicker and eaisier,you can also add crumbled sausage or bacon to the gravy for added flavor
place ham or bacon onto hot buttered english muffin,put poached egg on top of that then cover with the country gravy,it is REALLY YUMMY
my husband likes his with american cheese,i melt the cheese onto the english muffin first in the microwave for about 10 seconds,just enough to melt the cheese but not to make the muffin chewy
i have a child who hates eggs so he doesn't have egg on his it is still pretty good without the egg

Bagels and cream cheese
French toast
Pork chop biscuits (small boneless and canned biscuits)
Banana nut muffins or banana bread
English muffins and Canadian bacon or maybe spam
Cheese grits with toast
My fav.......breakfast stew
grits (about 5-6 serv)
sauteed bell pepper and onion
browned bulk sausage
cream of chicken soup
Good for large crowd and can keep warm in a crock
pot like on Christmas morning

Chocolate Banana Oatmeal Porridge
2 C. boiling water
1 C. rolled oats
1/4 tsp. salt
1/2 C. brown sugar
1 banana, mashed
1/4 C semisweet chocolate chips
In a saucepan, combine water, oats and salt. Simmer 5 minutes, uncovered, stirring occasionally. Remove from heat, cover, and let stand 3 minutes. Stir in brown sugar, banana and chocolate chips.

I really suggest cutting out alot of the fats the kids are eating. Also, it's OK if they eat the same thing some mornings. How about whole grain cereal and fruit a few times a week?
