BBQ Chicken Pizza:
We love the contrast of flavors provided by sweet tomato chutney, savory chicken, and sharp cheddar cheese.
1 (10-ounce) Italian cheese-flavored thin pizza crust (such as Boboli)
3/4 cup tomato chutney
2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
2/3 cup diced plum tomato
3/4 cup (3 ounces) shredded extra-sharp white cheddar cheese
1/3 cup chopped green onions
Preheat oven to 450°.
Place crust on a baking sheet. Bake at 450° for 3 minutes. Remove from oven; spread chutney over crust, leaving a 1/2-inch border.
Top chutney with chicken. Sprinkle diced tomato, cheese, and green onions evenly over chicken. Bake at 450° for 9 minutes or until cheese melts. Cut pizza into 6 wedges.
Note: If you can't find tomato chutney, make your own. Combine 2 cups diced plum tomato, 3 tablespoons brown sugar, 3 tablespoons cider vinegar, 1/8 teaspoon Jamaicañ jerk seasoning, and 1 minced garlic clove in a small saucepan; bring to a boil. Reduce heat to medium; cook 20 minutes or untril thickened.
Yield: 6 servings (serving size: 1 wedge)

If you don't wanna make everything from scratch buy Pillsbury Pizza crust, use alfredo sauce instead of tomato based sauce, cook up some chicken brest-cut them up and put them on the pizza with onlions, mushrooms, anything you like with chicken really and put cheese ontop a mixture of mozzerella and cheddar taste best on a chicken pizza and trust me the pillsbury pizza crust is soooo good.

Stretch pizza dough or have those nice flat breads as base. 3 options are then available: pesto (basil), white creamy sauce or tomato based sauce. It can be a leftover sauce you made for noodles. Spread the sauce, add cooked chicken pieces and veggies of your choice depending upon the sauce chosen! Add mozzarella or other cheese. Bake at 350 until golden.
Tip: don't put too much sauce and toppings. Just cover the base so it won't get drenched during cooking.

Chicken Fajita Pizza
Have a fiesta, Italian style, with pizza topped with salsa!
1 can (13.8 oz) Pillsbury® refrigerated pizza crust
1 tablespoon olive or vegetable oil
4 boneless skinless chicken breast halves (about 1 1/4 lb), cut into thin strips
1 to 2 teaspoons chili powder
1/2 to 1 teaspoon salt
1/2 teaspoon garlic powder
1 cup thinly sliced onions
1 cup green or red bell pepper strips, 2x1/4 inch
1/2 cup Old El Paso® Thick 'n Chunky salsa
2 cups shredded Monterey Jack cheese (8 oz)
1 . Heat oven to 425°F. Spray 12inch pizza pan or 13x9inch pan with cooking spray. Unroll dough; place in pan. Starting at center, press out dough with hands to edge of pan. Bake 7 to 9 minutes or until very light golden brown.
2 . Meanwhile, heat oil in 10-inch skillet over mediumhigh heat. Add chicken; sprinkle with chili powder, salt and garlic powder. Cook and stir 3 to 5 minutes or until lightly browned. Add onions and bell pepper strips; cook and stir 2 to 3 minutes longer or until chicken is no longer pink in center and vegetables are crisptender.
3 . Spoon chicken mixture evenly over partially baked crust. Spoon salsa over chicken. Sprinkle with cheese.
4 . Bake 14 to 18 minutes or until crust is golden brown.
High Altitude (3500-6500 ft)
After cooking chicken in skillet, add onions and bell pepper strips; cook and stir 3 to 5 minutes longer. Continue as directed above.
