I want to cook me and my partner a really nice meal, chicken is our favourite meat and i want to do something really nice with it. any suggestions?? (No curries please had one lst nite)

depending on how you want to cook your chicken, if you fried it i would suggest maybe go southern and have mac and cheese , string beans and yams also cornbread, or may be go simple and have the fried chicken , and a salad or stewed chicken with rice and veggies or barbecue chicken with a salad or again mac and cheese and veggies so many thing with chicken i could go on and on you get the pic ..... enjoy

There are plenty of suggestions but here's the best.

Ingredients:

2 chicken breasts
6 slices of streaky bacon
2 oz feta cheese
a few fresh coriander leaves
paprika
a little olive oil.

Open the chicken breasts and stuff generously with cubed feta cheese and coriander leaves torn into small pieces. Sprinkle the stuffing generously with the paprika.

Stretch the bacon by holding one end and running the back of a knife along the strip. This stops shrinkage during cooking.

Wrap the chicken breasts in the bacon slices, folding them from the bottom and over the top like a lattice.

Fry the breasts in the hot olive oil at a high temperature for a couple of minutes on each side.

Place the breasts in a pre-heated oven at 180deg C and bake for 20 - 30 minutes until cooked.

Serve with boiled small new potatoes drizzled with melted butter, and green vegetables (peas and green beans)

Delicious. And when you cut into the chicken you will have a crispy bacon exterior, juicy chicken and wonderfully flavoured melted feta cheese.

Very simply, take a whole chicken. Wash it, salt the inside and stuff the cavity with a whole lemon that pretty much fills it.

Roast the chicken: you now have lemon chicken. Serve with veggies and/or potatoes.

Or: Make chicken fricassee. Whole chicken in pieces. Dredge in flour, brown in deep frying pan using a small amount of grease. Remove and set aside.

Bring a pot of water to a boil, add salt and pepper, and a couple of Leeks chopped. Add the chicken and cook until done. When done cooking, add cream or milk, return to low simmer, thicken and serve with mashed potatos.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.

Pulled Chicken Sandwiches:

For dry rub:

1 Tsp pepper
1 Tsp brown sugar
1 Tsp paprika
2 Tsp kosher salt
1/2 tsp cayenne

2 split chicken breasts, skin removed
8 oz barbecue sauce, preferably Stubbs smoky mesquite
4 Kaiser rolls

1. Preheat oven to 475�. Combine ingredients for dry rub. Rub all over chicken breasts and place chicken. 2. Put roasting rack in 9x13 roasting pan and fill pan a quarter full will water. Put chicken on racks and roast for 40 minutes or until chicken is cooked through. 3. Let chicken cool until you are able to handle it. Pull chicken into small strips with your hands and put into medium glass baking pan. Pour in barbecue sauce and mix. 4. Bake at 350� for about 20 minutes or until sauce is bubbling. Remove from oven. 5. Split rolls and toast under broiler. Heap chicken on one side of roll and top with the other.

Serves 4 People

Fry an onion with a green pepper. Add a large can of Campbells condensed mushroom soup. Season with pepper and salt to taste. Pour over chicken and cook in moderate oven for 45 minutes - absolutley delicious served with saute potatoes or little roasties and peas.

You could make a potato gratin. Which is absolutely yummy.
Ingrediants are : potatoes cooked chicken brocolli onion cheese flour and a bit of red/green pepper.
Par boil potatoes/brocolli together.
Saute onions in butter.
Break up cooked chicken.
Make a.white sauce.

Add cheese/onions and peppers to sauce and season.
Put potatoes brocolli and chicken in a large flan or casserole dish and cover with sauce.
cook for twenty mins on gas mk 4 or equivillent hob heat.
Then serve.......... You'll love it.!

Get chicken breasts and brush will oil. Get paxo stuffing and cover with the dry paxo. Also slit the chicken open and insert some made stuffing, (make according to manufactures instructions.) Serve with new potatoes and veg with some chicken gravy. Delicious !

Crock pot Rotisserie Chicken

One Whole Chicken ( can also use chicken parts)
Olive Oil Pam spray
Lawery's Season Salt (No substitutes)
Tin Foil

Wash and dry off chicken...Spray Chicken all over with Olive Oil Pam Spray...and then season with Lawery's Season Salt...Take Tin Foil and make about 4 tin foil balls the size of tennis balls or so... Spray Crock pot with Olive Oil Spray and put the tin foil balls in bottom of crock pot...Put chicken on top of tin foil balls breast side down...DO NOT ADD ANY WATER...Place cover on and make sure it fits properly (if need to push on chicken to squish tin foil balls a little until cover fits)...Set on High (will not work on Low) and Cook for about 4-5 hours...(a 3lb chicken will take about 4 hours)...When lifting out of crock pot, it will literally fall off the bone, so be careful...:-)...I usually spoon some of the juice over the pieces of chicken before serving....ENJOY!!!

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.
