RIPE MANGOES
Mangoes vary from green to yellow to purplish-red, so color is not an indicator of whether a mango is ripe. The only way to tell, is to squeeze it gently. If the flesh gives way slightly, smell the stem end. If it gives off a fruity aroma, its ready. This is the best mango to buy if you want to snack on one immediately. If, however, you want to keep a couple at home for later, buy mangoes with firmer flesh. Once ripe, place your mangoes in the fridge.
TWO EASY WAYS TO EAT A MANGO
1. Insert a sharp knife into your mango until you strike the seed. Cut round the seed, lengthways or width ways. Twist your mango in two - the seed will separate from one half and stay lodged in the other. Remove the seed, slice and enjoy!!
2. Cut two thick slices lengthways off both sides of your unpeeled mango. Cut diagonal lines through the flesh down to the skin and repeat in die opposite direction to form a diamond or cube pattern. Flip the slices inside out and eat with a fork. Can even be used as a garnish method.

ripe: softer than a rock, harder than how you would want a plum to feel. something a litle softer maybe than an avocado.
cut: i like to cut it straight down just right of where i think the pit is. then continue to do so in a circle around the pit. you end up with a rectangular column enclosing the pit. then i eat off from around the pit and take the good pieces and score them with a knife just up to the skin. like a tictactoe board, with however many pieces you like. if it is for my personal use then i will eat right off of the skin by turning it kindof inside out. if it is for guests then i scrape my new cubes of mango out of the peel. mmm have fun, yummy

The chaps writing above definitely know what they are doing. I tend to get my hands incredibly messy when trying to eat a mango!
