It's based on the concept that the torah (five books of Moses or old testament) conceals the spiritual laws of the universe within the structure of its language, and that a very close examination of the Hebrew can reveal some of its secrets. Common examples include unusual grammatical structures, analyzing the numerical equivalent of the Hebrew words and comparing them to other words with the same numerical equivalent, etc. This isn't Kabbalah, but it is the basis for Kabbalah.
Despite what people are telling you, there is no point in studying Kabbalah isolated from studying traditional Judaism. There is no such thing as a non-Jewish understanding of Kabbalah. The kabbalah center specializes in bilking people by telling them it is teaching true kabbalah, when in fact it is teaching garbage. That's why they charge so much for their books: their purpose is to make a profit (and a very big one at that).

She gives a clear, readable, and informative look at what she refers to as "theoretical qabalah"--the philosophy behind the qabalah, in-depth examinations of the sephiroth, etc. It's a good starting place...if it interests you, you can go on to learn about "practical qabalah", for which you'd likely need an instructor.
And as for what it is, exactly...it's vague by nature, but essentially, it's a very powerful mystic worldview that connects and resonates with, well, pretty much everything. I'm not at all working towards a practical knowledge, but understanding the sephiroth helps me work in many other areas with a deeper understanding of the connections.
