Lord Ganesh is also named Ekadanta "The Lord with one tusk".
The Puranas state that Lord Ganesh broke his tusk during the battle against Gajamukhâsura (the elephant-headed Asura ).
Taking the advice of Shukracharya, the Asura guru, this demon followed severe penances. Thus, he got unconquerable powers from Shiva. But he misused those powers to harass the gods who went to Ganesh and requested his help.
Ganesh did not hesitate to give battle to this demon. During the fight, he understood that the demon could not be defeated, because of his particular powers, without an extraordinary act.
Therefore, Ganesh broke his right tusk and threw it at Gajamukhâsura, defeating him. He then pursued him and converted him into a mouse. Then he rode this mouse, which he used as a mount, keeping the asura under control.

The mouse is deemed to be the master of inside everything. The all-pervading Atman (soul) is the mouse that lives in the hole called Intellect, within the heart of every being. It hides itself behind the inscrutable shape of illusion.
Mouse is seemingly a small, negligible animal. But it is very enterprising despite its small size. It is always engaged in some kind of work. Hence it is said in Niti :
UDYAMAM SAHASAM DHAIRYAM
BUDDHIH SHAKTIH PARAKRAMAH |
SHEDTE YATRAVARTANTE TOTRADEVA SAHAYAKRIT||
Meaning : Gods too become helpful in the ventures that involve entrepreneurship, courage, patience, intelligence, capacity and powers.
Ganesha riding the mouse implies that wisdom is an attribute of ugly conglomeration of factors and further that the wise do not find anything in the world disproportionate or ugly.
The irony is that the subtllties of both escape Humans who do not seek balance.
