If you must give an "excuse" for quitting, which shouldn't really be required, you can simply say, "I am leaving to pursue other options," which is true regardless of whether you've found a better job offer, are returning to school or just going to sit around at home all day.

Just tell him directly and honestly why you want to quit. Of course, the reason should be valid - like another company is giving you a better offer or higher compensation. Who knows, if you're really that good, your boss might just give you a counter-offer (doubling your salary maybe) :)

You don't need an excuse. You don't need to give a reason at all.
Although, you might want to give some formal explanation if you ever want a reference. Just make your reason simple. You found another job closer to home, better pay, you think its time for a change, want to try something new, you need a break. Something you can get out in one sentence.

After 6 years of working for my previous boss, I lied & told him that my father had started a business & wanted me to join him as he really needed my help. My boss let me go with his best wishes & assured me that if things didn't work out with my dad then I could come back to work for him.

An excuse is not neccesary to quit your job as long as you give your two week notice......now if you do not plan to do that then it would be ethical to give a reason for the urgency.

Tell him he can't pay you enough, then if he offers better money stay at the job for a couple more weeks and 'quit' again saying you got offered more money elsewhere.
