grate a good strong cheese onto a bowl - add butter and a smidge of good English mustard mix together and spread over good toasted bread -place under grill untill golden and bubbling
Note: some do not use mustard but add worcester sauce you can EVEN add a beaten egg but in my opinion neither are indrediants for a trueWelsh Rarebit. (but do taste rather good)

Day old bread, toasted and cut into points (triangles)
One 12 oz bottle beer cold
1 lb grated cheese - cheddar is best, jack will do.
1 pinch dry mustard.
1 tablespoon butter
1 tablespoon flour
Make a roux with butter and flour. Stir in mustard and beer. Bring to a boil, lower flame and allow to thicken slightly. Stir in grated cheese until thick and really gooey.
(May not need all of the cheese). Serve in a bowl over toast points.
Known as Welsh Rarebit because that's what the family ate when the rabbit hunter came home empty handed.

To make welsh rarebit you grate however much cheese you want, put it in a saucepan on a low heat add a drop of milk,in the meantime toast your bread, add seasoning to taste to your cheese and milk mixture,it should have the consistency of a very thick sauce.Pour cheese mixture over freshly buttered toast and walla!!!!!!!!!!!! EAT!!!!!!!!!.DELICIOUS.It does thicken up as it cools on your toast.ENJOY.Have a good day

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup porter beer
3/4 cup heavy cream
6 ounces (approximately 1 1/2 cups) shredded Cheddar
2 drops hot sauce
4 slices toasted rye bread
In a medium saucepan over low heat, melt the butter and whisk in the flour. Cook, whisking constantly for 2 to 3 minutes, being careful not to brown the flour. Whisk in mustard, Worcestershire sauce, salt, and pepper until smooth. Add beer and whisk to combine. Pour in cream and whisk until well combined and smooth. Gradually add cheese, stirring constantly, until cheese melts and sauce is smooth; this will take 4 to 5 minutes. Add hot sauce. Pour over toast and serve immediately.
