Baked Corn
INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

Whatever you do if you are cooking them, be very careful to not overcook them. Try and stick with ones that are in season, that matters a lot for the flavor. When cooked, vegetables should be a little bit firm and bright in color. Adding a little lemon juice gives any vegetable extra flavor without making it unhealthy. Sauteed garlic also helps too. Just find a flavor you do like and pair it with the vegetable, it makes it easier to like.
I've always hated vegetables, but I've grown to love spinach sauteed in garlic, it probably my favorite now. If you want more flavor cook bacon in the pan first, leave some of the fat, take the bacon out, throw in the spinach until the spinach wilts down, coating the spinach in the fat. Don't overcook! Remove from heat and add back the bacon all chopped up. Yummy, but not so good for the arteries.
I also like steamed cauliflower with oyster sauce, just a little. I know it sounds gross, but I really hate cauliflower and the oyster sauce is so powerful that it covers up the taste of the cauliflower.
You can sprinkle chopped steamed carrots with a little bit of brown sugar and butter, put them under the broiler for a few minutes and instant caramelized carrots. Yummy.
Broccoli tossed with lemon juice and garlic, or just soy sauce. Yummy.

I love veggies sauteed or grilled. Try sliced zucchini cooked over medium/low in a little olive oil, toss in some sweet sliced onion, a smashed small clove of garlic. Cook until just barely tender. I make all kinds of combinations with this - fresh tomatoes and a little basil is great (added in last)....and/or some sugar snap peas, fresh green beans, and of course mushrooms. Cut veggies like zucchini or tomatoes lengthwise, brush with olive oil and grill on the BBQ. Do the same with corn on the cob. Experiment with spices like Mrs. Dash; comes in a lot of varieties. Stay away from cheap canned veggies. They'll turn off anyone.

1--Cook a 16-oz. package of frozen green beans according to the package directions. Drain, then stir in a teaspoon of butter, a teaspoon of garllic powder, and salt and pepper to taste.
2--My dad used to put ketchup on green beans. They're actually pretty good that way.
