Like should you count calories for maintaining your weight?

But be sure not to eliminate carbs and calories, you need those to function properly, and it really won't make so much of a deal. It's not what you eat, its how much of it. Not saying to skim, but there's a healthy amount to everything, you are actually healthier with the calories most likely.
Our bodies have like a caveman instinct. If they sense less food or nutrients are coming, they will absorb EVERYTHING, so you'll absorb even more or everything than if you ate a huge amount. But if you don't need to be on a diet, thats your choice, but you really don't need to count those calories unless you feel you should, just make sure you don't cut them all out. ^_^

It's a lot of work to maintain a food journal so I suspect if you aren't motivated by weight loss, your efforts will be short lived.

Once in a while, I log into www.fitday.com and track my calories for a few days to see where I am at and what changes I can make to further my physique. Generally, we eat the same things on a day to day basis, so a week of recording your activities and food intake will give you a general idea of which direction you are going in terms of calories.
