i ate a banana this morning and within 5 min. the peel was completely brown .anyone know why?

The yellow pigment in the banana peel is oxidized to a brown compound called melanin. Unlike the outside of the peel, the inside of the banana peel is very porus to oxygen.

When you peeled the fruit, you allowed very much more oxygen to enter the skin and the yellow turned to brown in a matter of minutes.

May be because you have kept the bananas for so long and they have been over ripen... usually at first the bananas have the green colour, then they become yellow and finally become brown... still can eat them, but better throw them away....

This is just oxidisation. The same thing happens to potatos, apples, avocados etc. Don't worry about it
Oh and bananas are rich in potassium

Maybe the banana became ripe
