This is my recipe for homemade hashbrowns.Take about two to three potatoes, peel and wash with cold water.Make sure you dry them off with a paper towel.Use a grater, just grate the potatoe, make sure, you use a paper towel to soak up the excessive water in the potatoe, once you grate the potatoes, put in frying pan, with either butter or margerine.Make sure it is the shape of the frying pan, keep patting down with a spatula, turn when edges are crispy and brown.If you do it right, the whole thing will flip in the shape of the frying pan.Good luck.(You can add chopped onions,chopped green pepper) It really brings out the taste.

Hash Browns:
Wash the dirt off your potatoes, and cut the eyes out, but leave the skin on. Use the biggest holes on your grater and grate them. Soak them in cool water, to rinse some of the starch away. In a medium high pan fry them up using butter or corn oil.
Season them with salt and pepper as soon as you remove them from the pan.
Home Fries:
Again, wash and de-eye, but leave the flavorful potato skins on (I like red potatoes for this). Cut the potatoes into cubes. Soak the cubes in cool water. Dice up some yellow onion and perhaps a green pepper (minced garlic is nice too). Fry them up in a medium high pan with butter or corn oil. Again save the salt and pepper until they're done cooking.

fry some finely chopped garlic. Then fry the potatoes. after that.. season the cooked fries with salt,pepper, the golden fried garlic and some fresh or dried rosemary. dont burn the garlic.. for hash browns..after boiling and grated the potatoes, while forming hash brown shapes I put some cheddar cheese or mozzarella inside the hash browns...then season to taste. better to pan fry the hash browns with clarified butter. enjoy =p

hash browns-get a food grater,it looks like a cheese grater,if you don't know ask someone at the store,peal and wash potato's, and grate them,spray pan with Pam,and add oil also,can fry on stove or in oven in a nonstick cooking sheet or cast iron fry pan.
home fries-wash potato's cut in the size of thickness desired,about a inch across,roll in flour,can fry same as hash browns,in or out of oven

You can shred a bake potato after cooled. add some diced tomatoes & red peppers a litle bit a garlic & you have yourself a tasty breakfast. As for home fries, i slice em up about 1/4 inch thick, leave the skin on them, & fry them in garlic butter

When I am making fried potatoes I like to use Russett's. For Mrs. Tres and I start off with two good sized spuds and I microwave them on high for about six minutes. Then slice them spuds to the size you like and fry away. Frying in bacon grease will also enhance the taste.

I cheat - I use a can of diced potatoes (or sliced if that's what I have). They get fried in a little oil and butter with some garlic salt and pepper, and sometimes parsley, rosemary, or chives, depending on what's growing well at the time.
Honestly, who wants to peel and boil potatoes in the morning?

Wash and nuke potatoes until they just start to soften (still pretty hard) dice and add to frying pan with canola oil. Liberally douse with dill and cook until they start to brown, Add finely diced onion and some salt (to taste) and cook until nicely browned and the onions start to brown. Enjoy
