One Buddha: Siddhartha Gautama Buddha, or the Tathagata. He was not fat, that is a zen metaphor for happiness. Other enightened people:

Bodhidharma: Brought Buddhism to China
Rinzai: Brought Buddhism to Japan
Mahakashyapa: Founded Zen
Many, Many More
