1 medium sized onion, chopped
6 cloves garlic, minced
2 T olive oil
8 leaves of fresh basil, finely sliced or torn
3 28oz cans of tomato puree
1 6oz can tomato paste
1 c Parmesan cheese
2 T salt
3 T sugar
1 c nice red wine
1 c water
Saute the onion in large sauce pot until they are clear, then add the garlic and saute for a minute more. Mix all ingredients together in pot and let simmer for a couple of hours. It is better if you cook it a day ahead. This is a lot of sauce but, it freezes well.

Follow these simple steps for tomato sauce.

You will need: olive oil, chopped garlic, chopped fresh tomatoes

Pour some olive oil in a frying pan on medium-low heat
Toss in the garlic
Add the tomatoes just before the garlic turns brown
Let simmer and stir until enough water evaporates (there should be only the slightest amount of liquid on top when you are finished).
While the tomatoes are cooking, add anything else you like.

Mix a can each of diced and crushed tomatoes in a pot. Saute a chopped onion with a couple of minced garlic cloves until soft and add to the sauce. Add a diced pepper or two and some small sliced mushrooms. Let it boil until the pepper is soft, then add a tsp of basil and a tsp of oregano (or more to taste). If you're not TOO vegetarian you can stir in a couple tablespoons of parmesan cheese.

That's as simple as I can think of!

With no meat-you are wasting your tI'me-I do repeat waste of time-im not slamming you for being vege. but don't kill the sauce-at least put in the meat for flavor and drain it out! any of their recipes will work 2 things you need to know-sausage & sugar-sausage gives the flavor and sugar 1 tab or so depends on the amount of sauce your making takes out the acid- i could go on about the pork and the meatballs-that really makes it fine-but i know you wouldn't like that-good luck ps olive oil Bertolli-extra light tasting a must! Also nice to dip you ital. bread into instead of butter
