I make it all the time. I line my casserole dish with croissant roll dough, put in a layer of ground beef mixed with garlic, onion, corn and ranch style beans(rinsed). Next layer is homemade mashed potatoes with real butter, ranch seasoning and sour cream, whipped and put on top like icing. Bake til the potatoes start to brown a little. Yummy

Love it -- and they serve a great shepherd's pie at The Black Sheep, an English-style pub in Ashland, Oregon. Simply seasoned with salt and black pepper in a rich, brown gravy, it's good, solid food. Try it with a pint of Fuller's ESB.
We would make this more often, except our three kids always eat ALL the mashed potatoes we make so there's never any left over to make into shepherd's pie... :-)
When my wife was growing up, her mother used to make a sort of middle-American variation on this (meat, gravy, potatoes, baked in layers). Take a couple pounds of ground beef, season it with salt and pepper, and pat it into the bottom of a baking dish. Pour a can of Campbell's Golden Cream of Mushroom Soup on top of the meat, then top the whole dish with Tater Tots. Cook at 375 degrees F for about 40-45 minutes. Serve with Mountain Dew Code Red or, if you prefer a heavier flavor, Black Cherry Dr. Pepper.
I continue to be amazed at how much I like this dish (though we make it with turkey these days, and the last time I made it my wife and I drank a La Vieille Ferme cotes du Rhone rose). It's one of my guilty pleasures, like Cheez-its with peanut butter...
