I was recently on vacation and went to a mexican resturant, it was awesome I have salsa that was sweet with some heat (not a whole lot) and also I tried "sweet beans" which honestly tasted like baked beans but without the sauce, I've been looking all over and I can not for the life of me find a recipe for "sweet beans"! I've been on tons of websites, any help that anyone could give me would be awesome, and thank you in advance

1 cup azuki beans
10 cups water
1/3 cup sugar
PREPARATION:
Put 4 cups of water in a pan and add azuki beans. Put the pan on high heat and bring to boil. Stop the heat and drain the water. Put 6 cups of water in a pan and add the boiled azuki beans. Put the pan on low heat and simmer the beans for an hour until soften. Take out excess water from the pan and add sugar. Stir the azuki on low heat for a few minutes until thicken. Stop the heat







Sweet Salsa

1 cup mincemeat
2 large green onions, chopped
2 cloves roasted garlic, mashed well
1 T. fresh cilantro, minced
1 T. Green Tabasco Sauce
1 t. black pepper
1/4 c. lime juice



Mix all ingredients well, chill, and serve as you would any other salsa. Goes GREAT with chicken tenders, or served with tortilla chips. If you like peach salsa, you'll love this one.

Feel free to substitute a pickled jalapeno (seeded) for the Tabasco, add a couple of chopped Roma tomatoes, or add a dash of cumin.

Here's some ideas for sweet salsa:

Salsa Verde
chopped tomatillos, onions, cilantro, jalapeno, and add about a teaspoon of sugar. The exact amounts are up to each cook, but try this: 10 tomatillos (those green tomato things with the papery layer over them) peel off the wrapper and scrub them under some water as the skins are sticky, 1 chopped maui or sweet onion, 1 large jalapeno chopped, 1 handfull of cilantro and about 1 tsp sugar. To save your hands from the jalapeno just put everything into the food processor, trust me.

Fruit salsa
pinapple, mango, tomato, onion, jalapeno, cilantro.
1 large fresh pinapple wedge, 1/2 mango or 1/2 cup, 1 sweet onion, 1 or 2 jalapenos, 1 handfull cilantro. Again, just use the food processor. Jalapeno hands have a way of making your eyes and your privates sting.
