While potatoes are considered root vegetables, they are largely water and starch in makeup. When fried in oil, the qualities of vegetables as we usually think of them, such as juicy crunch, fiber and relatively low fat content are lost, and the result is a thin layer of starch soaked in oil and flavored primarily with salt. It's tasty, to be sure, but a bowl of chips is not a salad.

I've always considered them a vegetable, and therefore one of the 4 basic food groups. Of course, my cholesterol is 12,540, and I've gained 150 pounds in the last 3 years.

They are a vegetable, but are servfed as a ancks. All that oil they fry the potato slices in. Whew!

because once they're fried crispy in oil then there's nothing good in them anymore....anything healthy about a potato has been cooked out of it & all you're left with is a terribly unhealthy, oily & salty junk food.
