Serves 2
Preparation Time: 15 minutes
Ingredients:
4 Idaho potatoes boiled and refrigerated overnight
1 small green pepper
1 small onion
4 tablespoons butter
1 teaspoon Hacomat seasoning
Salt & pepper to taste
Preparation:
Peel and dice the potatoes, set aside. Chop the green pepper and onion, sauté in the butter until translucent. Add potatoes. Cook at high heat without stirring until a golden-brown crust forms on the bottom. Flip and brown the other side. Serve.

I hate "white" hash browns at restaurants. I make mine as follows: Run a peeled russet potato through a box grater and into a strainer. Rinse the potato under cold water to remove the starch. Press dry and fry in a pan with a tbsp of butter and a little canola oil (to prevent burning). Sprinkle with Kosher salt and fresh ground pepper. Flip when golden brown and repeat for the other side. One medium sized potato makes one average serving. I don't like green pepper or onions in mine. That's optional if you like. Enjoy.
