Italian sausage's signature ingredients are basil, garlic, fennel, and crushed red pepper. Don't forget kosher salt!
It's best if you make it up the day before you plan to cook it, then cover it and refrigerate it overnight.
Chorizo is a Spanish sausage originally; the name has been adopted for a number of loose sausages throughout Latin America. The key to making something like chorizo is to add garlic, cumin, salt, and several kinds of powdered chiles -- I add Hungarian paprika for flavor, New Mexico powdered chile for depth, and ground chile arbol or chile japones (or in a pinch, cayenne) for real fire.
Both chorizo and Italian sausage can be made with commercially available ground pork. Andouille uses larger chunks of meat and is smoked; I've never made it at home, but I love cooking with it (and with Portuguese sausage).
And if you like spicy sausages, try this:
Jamaican-style meat patties
1 lb ground pork
1 tablespoon kosher salt
1 teaspoon garlic powder
1 tablespoon prepared curry powder
1/2 teaspoon crushed red pepper or to taste
1/2 teaspoon dried thyme
Blend ingredients. Test the seasoning: cook a small patty of the sausage (about 1cm/1/4" across) and check the salt balance. (Better to put in less than the full amount and add it later.) Cover and refrigerate overnight.
The next day, mince an onion and saute in a small amount of butter. When onion is clear, cook the curry sausage in the onion-butter mix. Break the curry sausage into tiny crumbles with a spatula as it cooks. Sprinkle 1 or 2 tablespoons of flour over the cooked sausage; cool.
Make a shortcrust pastry (pie crust), cut into 4" (10cm) circles. Place about a tablespoon of the cooled curry sausage into the middle of the circle; wet the edges and close into half-moons. Use a fork to crimp the edges.
Bake in a 375 degree oven for 20-25 minutes or until flaky and golden brown. If necessary, serve with chutney or hot sauce.

Chorizo is South American, notably Argentinian, not Italian. Here are one set of ingredients for chorizo. Everyone has their own style, but these ingredients are quite common:
1 cup lightly packed and chopped flat-leaf parsley
4 cloves of garlic, smashed and minced
1 tsp salt
1/2 tsp freshly ground peppercorns
1 tsp chilipepper, flakes
2 tbl fresh oregano, leaves, chopped
2 tbl fresh mixture of basil, rosemary, sage
2 tbl shallot, minced
2 tbl red wine vinegar
3 tbl lemon, juice
Mix with ground sausage meet, adding more or less of the flavours you like. This recipe is good for about 2 pounds. Allow to blend overnight in the fridge before stuffing the sausage casings.
These quantities are general - play with it a bit until you come up with your own taste. I always like to add Cilantro and a bit of lime juice too.

i like chorizo!!
one time, my dad made this stuff that tasted really good- like chorizo. i think he put like regular hamburger meat, Louisiana hot sauce, onions, and maybe some pepper in it.
