I was looking for a quick and easy recipe for frosting, and I found quite a few that include nothing but pudding. But I need to ask, isn't pudding supposed to be served cold? If I put my pudding "frosting" on the cake, will it be okay if it's not eaten right away?

If you do put pudding frosting on the cake and decide not to serve it right away, you will need to refrigerate it so that the pudding stays set on the cake and doesn't end up melting or thinning out any. I've done this quite often, as it cuts down on the fat and calories of cake frosting, and it's quite yummy!

Most recipes that use pudding in the frosting are using the instant pudding which you can mix into other ingredients cold. Any time you have a frosting with a lot of dairy product, you will need to refrigerate it.

Super quick ... soften a stick of butter to room temp. beat in 2 cups of powdered sugar, a little at a time. Add half-teaspoon vanilla extract. Get the exact texture you want by adding milk, a tablespoon at a time... beat till it's fluffy or as you like it. You can vary it by using different flavors too.

No Cook Coconut Caramel Pecan Frosting Recipe


1/2 cup soft butter
2 cups brown sugar
1/4 teaspoon vanilla extract
3 tablespoons heavy cream
1/2 cup shredded coconut
1/2 cup chopped pecans

1 servings 1 cake

10 minutes 10 mins prep

1. Cream the butter and vanilla.
2. Add brown sugar gradually while continuing to beat.
3. Stir in coconut and chopped nuts
4. Add only enough cream to achieve desired consistancy.
(Optional) If you make this the night before, you can put it the microwave for 1 minute after step 2. Beat for a minute then leave at room temp over night and add the cream the next day before using
