I really want to let him know I'm crazy about him, but I don't to just come out and say "Hey, I'm totally crazy about you." What do I say?

You should be honest with him, and how you do that is totally up to you. But, what I would suggest, is doing the whole secret admirer thing. Send him really sweet things(flowers, notes), and he doesn't know it's you. Don't do it for too long, or he'll think the admirer is a stalker, or something. Then, invite him to a public place to meet. Tell him you'll be the one with the red rose. Or, you could always go on Maury, or something

Most guys will know this instinctively - unless you worship him from afar. Ask him out - what's the worst thing that could happen. Yes he could say no, but then you will know exactly where you stand.
