Mommy's Sweet Carrot Milk

"A sweet milk flavored by fresh carrots. I love when my mother makes this, and this is a hit among our friends."
Original recipe yield: 1 gallon.

INGREDIENTS:

* 5 large carrots, peeled and cut into large chunks
* 2 cups water
* 3 quarts skim milk
* 3 cups sugar
* 1 teaspoon ground cardamom

DIRECTIONS:

1. Place the carrots and water into a saucepan, and bring to a boil. Boil until tender, about 5 minutes. Remove from heat and let cool slightly, then puree carrots and water in a blender.
2. In a large pot, heat the milk over medium heat. Stir in the carrots, sugar and cardamom until sugar has dissolved. Cool to room temperature, then refrigerate until chilled, about 2 hours. Shake or stir before serving.

Use baby carrots thats the best. Place in well buttered baking dish and top with brown sugar. Bake at 350° for 15 minutes

I cook clean baby carrots in enough water to cover and cook until almost tender then add several spoons of white sugar. I don't add salt, brown sugar, butter or spices. I like the sweet taste of pure carrot.

1 pound carrots sliced thin
1/2 c brown sugar
1 stick butter
1/2 t salt
1 t vanilla
1 t cinommon
1/2 t nutmeg
1/4 t allspice
1/4 c water
put sliced carrots salt an water in good size fry pain cook carrots til fork tender. drain whill carrots drain add butter to fry pan melt add all the rest. cook an stir 5 min add carrots cook an stir 2-3 min more til well coated..... enjoy......

steam your carrots until almost done. Then strain the. While they are straining, in the pot combine butter, brown sugar, and orange juice. Bring to slow rolling boil until a little thick. Then put the carrots back in the pot and stir. They are great.

Just cut them in 1" chunks and cook them in water with a few tablespoons (enough to make the water look brown, more than a few tbs. if you're making a lot) of brown sugar, and a little salt, until tender, 20-30 minutes. Be careful to let the water evaporate, but not to burn them. It's only a few minutes between the two. You can add butter, but the salt is probably enough for flavor, and who needs extra fat?

Boiled or steamed carots add a pat of butter and sprinkle about a tablespoon of brown sugar. Stir to combine. You can also use honey or maple syrup.

lightly scrub carrots, put into boiling water, in another pan put equal butter and honey,bit of fresh thyme, season with maldon salt melt and sizzle this pan, add cooked carrots,toss in butter honey mix till lightly caramelised, delicious.
