Ok, here's the deal...
I need some ideas on grilled chicken. Something that tastes really good, but it doesn't take 10 hours to make! heheheh :-)
I have about 6 hours (so I have some time to marinate etc).

Please help!!!

INGREDIENTS:
4 skinless, boneless chicken breast halves
1/4 cup lemon juice
1/4 cup lime juice
3 cups orange juice
1/4 cup crushed fresh mint leaves
2 tablespoons honey

DIRECTIONS:
Place the chicken into a large bowl, and pour in the lemon juice, lime juice and orange juice. Sprinkle the mint leaves over, and drizzle with honey. Cover and refrigerate overnight.
Preheat a grill for medium heat. When the grill is hot, lightly brush the grate with oil.
Place the chicken onto the preheated grill, and discard the marinade. Cook for 6 to 8 minutes per side, or until no longer pink and juices run clear.

Garlic Grilled Chicken

Great for cook-outs.


4 servings 38 min 30 min prep
Change to: servings US Metric
4 boneless skinless chicken breast halves
1 cup picante sauce
2 tablespoons vegetable oil
1 tablespoon lime juice
2 cloves garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon salt
additional picante sauce


Place each chicken breast between 2 pieces of plastic wrap.
Flatten chicken to 1/4-inch thickness, using a meat mallet; cut into 1-inch pieces.
Place in a shallow container.
Combine next 7 ingredients, mixing well.
Pour over chicken;cover and chill 1-2 hours.
Thread chicken onto skewers; cook over hot coals 6-8 minutes or until done, turning occasionally and basting with remaining marinade.
Serve with picante sauce.

Just take some boneless chicken breasts and season with a dry bbq rub. Grill over medium heat about 5-6 mins per side depending on the thickness. Serve along side some Grilled Corn or Asparagus and enjoy.

Try making a quick marinade by mixing a can of beer with dijon mustard. Put boneless skinless chicken breasts in with the marinade for about a half hour. Grill them until they turn golden (maybe 15 minutes or less per side). The alcohol cooks off so you can serve them to kids also.

4 boneless chicken breast halves
1 cup pineapple juice
3 slices crystallized ginger
3 tablespoons sesame oil
1 teaspoon garlic powder
4 tablespoons light brown sugar
mix all ingredients in a ziploc bag, mix well. place chicken in bag and marinate up to overnight. grill chicken over medium heat, after 2 minutes move chicken 1/2 turn to create perfect grill marks. after 2 more minutes flip and repeat until cooked through, depending on thickness of chicken.

Kabobs: cut chicken into squares and alternate on skewer with red peppers, zucchini, mushrooms, etc.

Make some couscous to line the serving platter.

I love to sprinkle Lowery's Monterrey Steak seasoning on the before grilling chicken!

Finally, if you want a good dipping sauce, take the flavor packet from any box of noodles, like Parmesan noodles, and mix the packet with butter only. Drizzle it over the kabobs just before serving.

Bistro Grilled Chicken Pizza:

Prep: 15 min., Grill: 10 min. Use long-handled grilling tongs and a spatula to turn the dough with ease.

1 (13.8-ounce) can refrigerated pizza crust dough
1 teaspoon olive oil
3/4 cup pizza sauce
4 plum tomatoes, sliced
2 cups chopped cooked chicken
1 (4-ounce) package tomato-and-basil feta cheese
1 cup (4 ounces) shredded mozzarella cheese
2 tablespoons chopped fresh basil

Unroll dough, and place on a lightly greased 18- x 12-inch sheet of heavy-duty aluminum foil. Starting at center, press out dough with hands to form a 13- x 9-inch rectangle. Brush dough evenly with olive oil.

Invert dough onto grill cooking grate; peel off foil. Grill, covered with grill lid, over medium heat (300° to 350°) 2 to 3 minutes or until bottom of dough is golden brown. Turn dough over, and grill, covered with grill lid, 1 to 2 minutes or until bottom is set. Carefully remove crust from grill to an aluminum foil-lined baking sheet.

Microwave pizza sauce in a small glass bowl at HIGH 30 seconds or until warm, stirring once. Spread sauce evenly over crust; top with tomatoes and chicken. Sprinkle evenly with cheeses and basil. Return pizza to cooking grate (pizza should slide easily). Grill, covered with grill lid, 3 to 5 more minutes or until crust is done and cheese is melted.

Yield: Makes 6 servings

I've never been the marinating kind of cook. I like to grill my chicken and a little bit before it's done brush some honey mustard dressing on it. If you put the honey mustard dressing on it too soon it will burn. It's definitely a wait till it's almost done kind of thing. BBQ sauce is another sauce you can brush on.

Make this mixture:

1 egg
1/2 cup vegetable oil
1 cup vinegar
1 tsp salt
1 tsp poultry seasoning
Ground pepper to taste

Beat well.
Use to baste chicken while grilling. (Can be used as marinade if you want to.) Baste and turn chicken frequently over hot coals until thoroughly cooked.

Take the skins off 4 chicken breasts... rub them with salt and pepper, wrap them in foil with a knob of butter on each one... roast in the oven for 20 minutes.. menwhile prepare some pasta, mix it with sweetcorn and bacon.. serve with a green salad and crutons. Can't go wrong. :)
