Low Carb Chocolate Ganache (for Truffles or Sauce)

Traditionally, ganache is made with half chocolate and half cream. However, the consistency depends a lot upon the chocolate and the sweetener, especially when using unsweetened chocolate. This sugar free low carb chocolate ganache can be used to make truffles or a chocolate sauce, depending upon how much cream is in them. You can easily alter the amount - I used 8 oz.
INGREDIENTS:
8 oz unsweetened chocolate
1 cup heavy cream
1 teaspoons vanilla
1/4 teaspoon salt
2 cups erythritol
Artificial sweetener equal to one cup of sugar
PREPARATION:
Heat the cream, vanilla, sweetener and salt until bubbles form. Remove from heat. Add chocolate pieces and let melt, stirring occasionally. Add erythritol.

At this point, you can let it cool to room temperature at which point it can be rolled into balls as the base of truffles (which you can then roll in nuts, coconut, or cocoa powder), or you can use it as the base for a sauce by adding cream until it is the consistency you want.

Nutritional Information:This whole recipe, which will make a whole lot of truffles, has 37 grams effective carbohydrateplus 35 grams of fiber

Sugar Free Cinnamon Cookies INGREDIENTS 2 eggs 2 tablespoons water 5 teaspoons fructose sweetener 1 teaspoon ground cinnamon 1 1/2 cups all-purpose flour 1/2 teaspoon baking soda 1/4 teaspoon salt DIRECTIONS Beat eggs and water until light and fluffy. Beat in sugar replacement and ground cinnamon. Combine flour, baking soda and salt in sifter; sift half of the dry ingredients over egg mixture. Fold to completely blend. Repeat with remaining dry ingredients. Drop by teaspoonfuls onto greased cookie sheets, 2 to 3 inches apart. Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes.

Use can use maltitol, stevia, splenda and just switch it out for sugar. Remember to use unsweetened chocolate, may need to add more sweetner though...to compensate for the chocolate.

they say use slenda just as you would sugar
I think it would be like sugar-free choc and heavy
cream?
